dluke and I kicked off a cream ale on Saturday with light malt, some fuggles hops, and flake barley. We intend to add some real vanilla bean when we rack it to the secondary, hopefully resulting in a vanilla cream ale for the spring. Also, we only need one bean - dluke has the other for making real vanilla ice cream.

Online recipies look like they want 2 beans per quart, or 1 bean and 1 tsp. vanilla extract. I usually make 2 quarts of ice cream (1 half gallon) at a time. When I make it with just extract, I use a little over 2 tsp. of extract and it ends up pretty tasty. I think I’ll make 2 quarts with 1 bean and 1.5 tsp of extract. I’ll freeze it in two containers so that you and Carter can enjoy half of the result.

cool. I’m surprised that it takes so much vanilla to get the flavor.
